Description

Panela is a traditional ingredient widely used in Latin American cuisine, especially in recipes for desserts, beverages, and dishes that require a natural sweet touch. It is a type of unrefined sugar, made from sugarcane juice that is cooked until it solidifies, forming blocks or cones of a dark brown color and intense flavor.

Its origin dates back to the tropical regions of Latin America, where sugarcane is a predominant crop. Countries such as Colombia, Mexico, Venezuela, Peru, and others in Central and South America produce panela both artisanally and industrially, making it an essential ingredient in their traditional gastronomy.

Panela is valued not only for its characteristic flavor, which provides notes of caramel and molasses, but also for its nutritional properties. Unlike refined white sugar, panela retains minerals such as iron, calcium, magnesium, and potassium, as it does not undergo chemical refining processes. This makes it a more natural and nutritious option for sweetening foods and beverages.

In different Spanish-speaking countries, panela is also known as piloncillo (Mexico), rapadura (Colombia, Brazil - although in Brazil the Portuguese term is used), panela amarga, or simply whole cane sugar.

In cooking, panela is used to prepare everything from traditional beverages like agua de panela or sweet tea, to sauces, desserts, breads, and stews. Its solid texture allows it to dissolve slowly, providing natural sweetness and a deep, aromatic flavor.
