Description

Pea shoots are the tender and delicate sprouts that emerge from young pea seeds, especially from the Pisum sativum plant. These shoots, composed of thin stems and small leaves, are frequently used in cooking for their crunchy texture and fresh, slightly sweet and vegetal flavor, reminiscent of fresh peas. They are a highly valued ingredient in salads, stir-fries, soups, and as a garnish in various dishes.

The origin of pea shoots is linked to the pea plant itself, whose cultivation dates back thousands of years in the Mediterranean region and Western Asia. Today, their production has spread worldwide, being very popular in Asian cuisine and in the healthy, natural cooking of the entire world due to their freshness and nutritional contribution.

Regarding their properties, pea shoots are an excellent source of vitamin C, vitamin A, and certain minerals like iron and calcium. Furthermore, they contain antioxidants and dietary fiber, contributing to a balanced diet and aiding digestion. Due to their low caloric content, they are recommended for weight control diets or cleansing plans.

In different regions of Latin America, pea shoots may also be known as "pea sprouts", "tender pea shoots", or simply "tender peas" when referring to the early stages of the pea. Although these terms may vary, they all refer to the young and edible form of this growing legume.
