Description

Raw carrots are the edible roots of the Daucus carota plant, known for their characteristic bright orange color, although varieties also exist in purple, red, yellow, and white tones. They are a staple ingredient in global cuisine, valued for both their sweet, fresh flavor and their crunchy texture.

This vegetable originated in Central Asia, where it was first cultivated thousands of years ago before spreading to Europe and other regions. Today, carrots are grown globally and are a common food in salads, side dishes, juices, and a wide variety of dishes.

Regarding their properties, raw carrots are rich in beta-carotene (an antioxidant that the body converts into vitamin A), dietary fiber, vitamins C and K, and minerals such as potassium. Their consumption helps improve eye health, strengthen the immune system, and promote healthy digestion.

In Latin America, raw carrots may be referred to by various names or synonyms depending on the country, including: fresh carrot, whole carrot, or simply carrot. In culinary contexts, it is common to refer to them as salad carrots or cooking carrots, highlighting their use directly without prior cooking.
