Description

Red flesh yam is a tropical tuber highly valued in the cuisines of various regions of Latin America, Africa, and the Caribbean. It is characterized by its rough, brown skin and flesh that ranges from white to deep red, from which its common name originates. Its texture is firm and when cooked it becomes soft and creamy, making it ideal for preparations ranging from stews and mashes to fries and soups.

The red flesh yam is native to West Africa, where it has been cultivated for thousands of years, and later spread to other tropical regions through trade and migration. In Latin America, its cultivation is concentrated mainly in Caribbean countries, Colombia, Venezuela, and the Amazon region.

From a nutritional point of view, yam is an excellent source of complex carbohydrates, dietary fiber, B vitamins (particularly B6), and minerals such as potassium and manganese. It also possesses natural antioxidants that contribute to digestive health and blood sugar control.

Depending on the country, this tuber may have different names in Spanish. Some synonyms used in Hispanic America are:

  • Ñame rojo
  • Ñame colorado
  • Ñame de carne roja
  • Ñame morado (although it usually refers to similar varieties with purple tones)

In cooking, red flesh yam is used to prepare traditional dishes such as sancochado, mashes to accompany meats, and in typical Caribbean recipes like "fufu" or nutritious broths.
