Description

Sulfur-free molasses is a thick and viscous byproduct obtained during the production of sugar from sugarcane or sugar beets, but in this case, without the addition of sulfur dioxide as a preservative. It is characterized by its dark color and its intense, sweet flavor with bitter notes, making it a highly valued natural sweetener in cooking.

This type of molasses is especially prized in gastronomy for its purity and for retaining most of its nutritional properties intact, as it contains no sulfites. Its use is common in traditional recipes for baked goods, pastries, marinades, sauces, and typical dishes where a deep flavor and a sweet touch are required, in addition to providing moisture and texture.

Molasses primarily originates from sugarcane-producing countries, such as Cuba, the Dominican Republic, and other Caribbean nations, as well as in South America and Central America.

Among its nutritional properties, its content of minerals such as iron, calcium, potassium, and magnesium stands out, in addition to natural antioxidants. Due to its mineral content, it is also used in healthy diets as an alternative sweetener to refined sugar.

Regarding synonyms in different Spanish-speaking regions of Latin America, sulfur-free molasses may also be found under terms such as mielato or simply natural molasses, although the most universal and recognized term is "molasses." It is important to note that the "sulfur-free" distinction refers to its processing without sulfites, which is specifically indicated to differentiate it from conventional molasses that does contain them.
