Description

Scamorza Cheese is a semi-soft Italian cheese, of the pasta filata (stretched-curd) type, similar to mozzarella but with a more intense flavor and a slightly firmer texture. Originating from the Campania region, particularly in Naples and Calabria, this cheese is traditionally made from cow's milk, although it can also be found in buffalo milk versions.

Scamorza is characterized by its oval or pear-like shape and is often lightly smoked, which gives it a highly appreciated smoky aroma and flavor in cooking. Its name comes from the Italian dialect "scamorzare", which means "to cut off the end", referring to the technique used to shape the cheese by cutting off its tip before hanging it to dry.

In cooking, scamorza cheese is ideal for gratin, melting, or using in hot preparations, as it maintains its creaminess and imparts a characteristic, smoky flavor to pizzas, pastas, lasagnas, and sandwiches. It can also be eaten fresh, similar to mozzarella, accompanying salads or cheese boards.

Properties: It is a good source of protein, calcium, and fats, providing energy and essential nutrients for bone and muscle health. Its fat content is usually medium-high, so it is recommended to consume it in moderation as part of a balanced diet.

Synonyms in Spanish (Latin America): Although the term "scamorza" is frequently used, in some regions it may be referred to as queso ahumado (smoked cheese) or simply as a variety of queso pasta hilada (stretched-curd cheese). There is no direct and universal synonym, but it is generally understood as a type of "smoked mozzarella cheese".
