Description

Annatto is a spice primarily used as a natural coloring in cooking, obtained from the seeds of the Bixa orellana tree. These deep red seeds are ground to extract a pigment called bixin, which imparts a characteristic orange or reddish hue to various dishes.

Origin: Annatto is native to the tropical regions of the Americas, especially countries like Mexico, Colombia, Venezuela, and other nations in Central and South America, where it has been used since pre-Columbian times for cooking as well as for ceremonial and cosmetic purposes.

Properties: In addition to its coloring function, annatto has a mild and slightly earthy flavor that does not significantly alter the overall profile of foods. It is a natural alternative to artificial coloring and is commonly used in rice dishes, stews, marinades, and sausages to give them an appealing color.

Synonyms in Hispanic America: In different Spanish-speaking countries, annatto goes by various names such as achiote (the most common), colorín, or onoto. In Mexico and Central America, the term "achiote" is primarily used, while in Caribbean countries and Venezuela, it is commonly called "onoto".

Its versatility and traditional use in many Latin American recipes make annatto an essential ingredient for adding color and flavor to various typical dishes.
