Description
Rye grains are the whole seeds of the rye plant (Secale cereale), a temperate-climate cereal widely cultivated in Europe, North America, and parts of Asia. These grains have a dark brown or grayish color with a slightly harder texture than wheat and are known for their characteristic, somewhat earthy, and slightly sweet flavor.
Rye originated primarily in Eastern and Central Europe, where it has been a staple food for centuries, especially in countries like Russia, Germany, and Poland. Today, its cultivation has spread to different regions due to its resistance to cold climates and poor soils.
Properties: Rye grains are an excellent source of dietary fiber, which helps improve digestion and maintain a feeling of fullness. They also provide B vitamins, minerals such as iron, magnesium, and zinc, and natural antioxidants. In cooking, they are primarily used to prepare whole-grain breads, cereals, and other baked goods, contributing a characteristic flavor and aroma that enhance traditional and healthy recipes.
Synonyms in Hispanic America: in different regions, it may simply be referred to as rye or rye grains. Although it does not have very different names, in some places the whole grains are also called rye seeds.
