Description

Oyster sauce is a thick and dark condiment, with an intense umami flavor and slightly sweet, made from the reduction of cooked oyster extract with soy sauce, sugar, and other seasonings. It is a fundamental ingredient in Asian cuisine, especially in Chinese, Thai, and Vietnamese gastronomy, where it is used to add depth and flavor to a wide variety of dishes such as stir-fries, marinades, soups, and dressings.

The origin of oyster sauce dates back to the early 20th century in the province of Canton, in southern China, where a cook discovered that by slowly cooking oysters, a tasty juice was obtained that could be concentrated and transformed into a sauce. Since then, its popularity has spread throughout the world, and it has become a basic ingredient for enhancing flavors in cooking.

Among its properties, oyster sauce provides a salty and umami flavor, which helps to balance and enrich dishes without the need to add large amounts of salt. Furthermore, it contains minerals such as zinc and iron from the oysters, albeit in small quantities due to its moderate use as a condiment.

In different regions of Latin America, this ingredient may also be known as "salsa de ostión", although the most common and recognized name is "salsa de ostras". It is important not to confuse it with broths or extracts from different shellfish, as the formulation and flavor can vary significantly.
