Description

Soft-shell crabs are marine crustaceans characterized by having recently shed their hard exoskeleton, leaving a soft and flexible shell. This transitional state allows them to be consumed whole, including the legs and shell, making them a highly prized ingredient in gastronomy for their delicate texture and intense ocean flavor.

Their origin is primarily in temperate and subtropical coastal areas, such as the Atlantic coasts, especially in the United States and various Latin American countries. In cooking, they are very popular in recipes that take advantage of their tender texture for frying, steaming, or including them in stews and soups.

In terms of properties, soft-shell crabs are an excellent source of high-quality protein, low in saturated fats, and rich in minerals such as zinc, calcium, and iron. Additionally, they provide omega-3 fatty acids that benefit cardiovascular health.

In different regions of Latin America, soft-shell crabs may be known by various names, such as jaiba muda in Mexico and Central America, or simply cangrejo blando in Caribbean and South American countries. Regardless of the term, it is the same exquisite ingredient, ideal for fresh and seafood dishes.
